When it’s scorching exterior, and possibly even hotter inside, the soups and hearty casseroles we crave in cooler climate don’t sound interesting. Moreover, nobody needs to have the oven heating up their kitchen or to spend time over a scorching range on a steamy summer time day! A few of these dishes may be ready within the morning when it’s cooler and a few don’t require cooking.

Hummus or different bean spreads

  1. Dip lower up greens, crisp fruits, and crackers or tortilla chips in home made or bought hummus
  2. Roll hummus and chopped greens in a whole-grain tortilla
  3. Unfold white bean dip on sliced baguettes and prime with strips of roasted crimson pepper
  4. Heat corn tortillas in a skillet and prime with pinto bean unfold, salsa, chopped tomatoes, and shredded lettuce
  5. High a microwaved potato or candy potato with a bean unfold. Strive a garlicky hummus on a white potato or roasted crimson pepper hummus on a candy potato.

Sandwiches – serve with recent fruit and a facet salad

  1. Tofu salad with sliced tomatoes in a pita pocket
  2. Not-tuna salad (made with chickpeas, vegan mayo, chopped celery, and spices to style) on toasted rye bread
  3. Marinated tofu with sprouts or lettuce, shredded carrots, and peanut sauce in a wrap. Marinated tofu and peanut sauce may be bought or home made
  4. Sliced bagel with nut butter and sliced fruit (strive nectarines, peaches, or different fruit in season)
  5. Vegan deli slices on a sub roll with French dressing dressing, tomatoes, and lettuce

Salads – make forward and chill till dinner; can serve with a fruit salad and bread

  1. Potato salad with black beans, corn, and a salsa dressing
  2. Pasta salad with chickpeas, cherry tomatoes, recent basil, and Italian dressing
  3. Spaghetti with a soy-sesame dressing tossed with cubes of baked tofu and steamed (or microwaved) broccoli
  4. Rice salad with adzuki beans, diced carrots and cucumbers, and a candy chili sauce
  5. Peanut noodles with water chestnuts and crimson pepper strips
  6. Taboulleh (bulgur with parsley, scallions, mint, tomatoes, and cucumbers in a lemon-olive oil dressing) with chickpeas
  7. Three bean salad
  8. Shredded cabbage in a soy-sesame dressing with baked tofu or seitan strips
  9. Quinoa and bean salad with shredded kale and a cumin-lime French dressing
  10. Chef salad with strips of vegan deli slices and cubed or grated vegan “cheese”

Miscellaneous

  1. Veggie sushi – home made or bought
  2. Smoothie made with plant milk, silken tofu, recent and/or frozen fruit; can add nut butter and leafy greens for a meal in a glass
  3. Vegan yogurt with berries and chopped nuts on a toaster waffle
  4. Gazpacho garnished with croutons, chopped tomatoes and cucumbers, and avocado slices
  5. Rice paper wrappers full of rice noodles, shredded Napa cabbage, baked tofu, cubed mango, and chopped peanuts
