Chef Nancy Berkoff, EdD, RD, says you should utilize spinach wherever you usually use lettuce — on sandwiches, chopped in wraps or tacos, or in salads. Recent spinach is a hearty base for entrée salads. Toss recent spinach with finely diced pineapple, sliced strawberries, chopped pistachios, sunflower seeds or soy nuts, and dietary yeast. Create a dressing with balsamic vinegar, pineapple juice, and contact of mustard.
To rapidly (and we imply rapidly) cook dinner spinach, spray a frying pan with vegetable oil, sprinkle in some chopped recent or dried garlic, and get the pan sizzling. Toss within the spinach and flash sauté, turning continuously. This could take one or two minutes, tops.
