Pistachio Cake with Streusel Topping and Vanilla Glaze


For the Cake:

  • 4 massive eggs
  • 1 cup maple sugar or coconut sugar

For the Pistachio Streusel:

  • cup + 2 tablespoons oat flour
  • ½ cup pistachios finely chopped
  • cup coconut sugar
  • 3 tablespoons butter melted
  • Pinch of salt

For the Vanilla Glaze:

  • ¼ cup powdered sugar
  • 1 teaspoon vanilla bean paste
  • 1 tablespoon water

Combine the Moist Components:

  • In a big mixing bowl, whisk collectively the eggs, maple sugar, applesauce, oil, and vanilla till clean and properly mixed.
