Dandelion Colombo
(Serves 6)
1 Tablespoon oil
1 medium cauliflower, sliced
6 cloves of garlic, chopped
2 small sizzling chili peppers, seeds and ribs eliminated, and finely chopped, or to style
6 cups dandelion leaves, arugula, or different bitter greens, rinsed, drained, and chopped
1 teaspoon floor coriander
1 teaspoon turmeric
1/2 teaspoon floor yellow mustard seed
Pinch floor allspice
1 cup lite coconut milk
1/2 cup agency silken tofu, drained
1/2 cup water
1-1/2 Tablespoons miso
In a big pot, warmth oil and sauté cauliflower, garlic, and peppers about 5 minutes. Add chopped greens. In the meantime, purée all remaining elements in a blender.
Combine the purée with the sautéed elements, deliver to a boil, scale back the warmth to low, cowl, and cook dinner one other 6-10 minutes, or till the cauliflower is tender. Serve instantly whereas heat.
