Grilled Contemporary Fruit Kebobs with Ginger and Mint
(Serves 10)
Marinade:
1/2 cup rum or orange juice blended with 1 teaspoon rum extract
2 Tablespoons maple syrup
2 Tablespoons recent lemon juice
1 teaspoon minced recent ginger
Kebobs:
8 inexperienced apples, cored, peeled, minimize into 10 items every
8 ripe pears, cored, peeled, minimize into 10 items every
8 small bananas, peeled and sliced into 10 items every
1 medium cantaloupe or small honeydew, seeded, peeled, and minimize into chunks (or use a melon baller to create balls)
1 medium recent pineapple, peeled, cored, prime off, and minimize into 1-inch chunks (about 2-1/2 cups)
10 crimson seedless grapes or small recent strawberries, washed
Dip:
2 cups plain or lemon-flavored soy yogurt
2 Tablespoons maple syrup
1 Tablespoon minced recent ginger
1 Tablespoon minced recent mint
Put together marinade by mixing all marinade components in a plastic or glass bowl collectively till nicely mixed. Place apples, pears, bananas, melon, and pineapple within the marinade. Permit kebobs to marinate within the fridge for not less than 1 hour.
Whereas fruit marinates, put together dip by mixing all dip components collectively till nicely mixed. Place dip in a serving bowl and refrigerate till wanted.
